Milky Goodness : Beef Cream Stew

I have this one notebook which I have been filling in with recipes I have come across for years. Every dish in my book has a story and memory behind.

Among all the recipes I have, cream stew is one of my favourite dishes. It was the first dish I cooked for my boyfriend and every time I cook this stew, it brings back all the old memories. Because the base is made of butter, milk and flour, it has a lovely creamy and mild taste. It is definitely a dish that I like to cook for and share with someone special.

Last week, we decided to just have dinner and chill since he was going back to London for Easter. Probably because l was thinking back on those old memories, I decided to cook a beef cream stew. I just felt it’d be a appropriate dish to cook since I wouldn’t be seeing his face for awhile. Well that’s fair right? No? haha

Now, using beef can be tricky when it comes to making a soup/stew dish. If you don’t give it enough time, the meat gets really hard and you might feel as if you’re chowing on rubber. You definitely want to avoid that. I usually like simmering the stew for 1.5-2 hours with a very low heat. This will give enough time to break down the muscles in the beef.

I know that some people usually like using those Cream Stew packed mix, but I personally think that stew made from scratch tastes better. Having said that, I know I probably should write down the recipe here but please bear with me for this time. It’d make so much more sense if I upload pictures as I explain each step but I totally forgot to take pictures. Oh wells. So yeah, next time it is. Oopsie haha

1 + 1 = ♥︎ : Japanese Curry Omelette Rice

Oh fluffy eggs. Oh you damn fluffy, luxurious, golden eggs. Being carefully placed on a bed of rice and covered with a rich, deep-flavoured Japanese curry. I swear, this is just, almost a sin.

Creating new food ideas is one of my favourite things to do ー especially creating one not just for myself, but for someone else, gives me such an incredible feeling. Spending time thinking what they will like and what will make them smile; those thoughts simply excite me. The moment you place the dish in front of them and see excitement in their eyes as they take their first bite… There is literally nothing else that can satisfy me more.

This dish was inspired by a clip from a Japanese film from the 80s. Two characters sneak into a kitchen and have a midnight cooking session – they make a beautiful, omelette rice. I love how the cooking scene was given a simple and easy vibe, yet, was so powerful that it guarantees the audience a satisfying flavour.  (You just need to watch this clip with your own eyes. The movie clip just simply gives you an omelette craving. “Tampopo Omelette Rice”. It was named after Tampopo flowers (dandelions in Japanese), which resemble fully-bloomed dandelions on a sunny Spring day. Fluffy, golden, half-cooked goodness. Sure, omelette rice by itself is a lovely dish. But why not spice it up with gently-cooked curry? Carefully-blended curry spices and a mild, fluffy omelette creates such a flavourful harmony. Plus, the person I created this recipe for is actually a huge fan of curry. Well then, nothing was stopping me from giving this recipe a try, right?

Although I used Japanese curry to accompany the omelette rice this time, you can definitely try and substitute the curry with other sauces too. On a cold cloudy day, it’d be lovely with a slowly-cooked warm milky white stew. If you’re a big fan of spaghetti bolognese, then why not try this dish with some bolognese sauce,  chunky vegetables and minced beef. For those seafood lovers out there, I’d say make yours using a consommé-based starchy sauce with cod fish or shrimps. (And maybe seasoning with some aromatic corianders and chilli oil too. Mmmm…)

The best part of this dish is that, because of the simplicity of the omelette rice, you can pretty much use whatever sauce you like. You can come up with a special omelette rice for whoever you’re cooking for. And perhaps, if you’re cooking this for someone special and know what the person likes, you stand a good chance of making him/her smile too! Fluffy omelette rice for the win;-)

Anti-Monday Blue : 42 Juice Bar

Every Monday, I have a seminar from 9-11AM for this term and it has been such a killer. I am not a Monday person myself and on top of that, morning isn’t really a best friend of mine. And yes, I’m one of those people who desperately look for coffee or tea to get started for a brand new day.

Waking up in the morning and dragging myself to the seminar, I was not the happiest person on the earth and was already looking forward to the weekend. But you know, like a proverb says, “The early bird gets the worms” right? Sometimes you encounter something you have been missing out for a long time.

After our seminar, my friend and I decided to go for lunch in town. As we were walking around, she introduced me to this organic juice place called 42 Juice Bar, which now has been added onto the list of my favourite places in Brighton.

This lovely shop is located at 19 Market Street. (It’s near Cafe Rouge and PizzaExpress I would say.) As we walked in, it literally didn’t take me a second to fall in love with this place. (For those who know me, once you go visit, I bet you’d say “yeah.. this is such a miho-place.” haha) Such a cute clean atmosphere, a variety of freshly made colourful drinks and a very friendly lady who was working there. They have such a wide range of drinks which are made with organic vegetables and fruits. (For those nuts milk lovers, they also have got a range of drinks which are blended with almond milk and cashew milk as well.)

And what’s more to adore about this little lovely place is that, all of their freshly made drinks is cold-pressed. This method has abled to save as many vitamins and nutritions as possible until the very last moment when they’re consumed. You must be thinking, “well okay… But what’s really so special about it?”

In a normal juicing method, high-speed cutting and blending ingredients produce heat during those processes. This naughty heat causes oxidation. It kills the rich nutrients and also it becomes crucial that those produced drinks are consumed as soon as possible before the nutrients get destroyed. Cold-press juicing method, on the other hand, is to extract juice by pressing and grinding ingredients and this means there is NO heat produced throughout the juicing process at all. This is not only beneficial to protect so much more nutritions, but also to save them for a longer period of time. (Some even says the cold-pressed juice will last for 3 days without losing any vitamins and nutritions.) Pretty cool stuff right?

As my very exciting first attempt, I picked up “Almond Mylk Green Matcha”. (I should’ve gone for those original green or fruit juices but I mean c’mon… It’s matcha. I couldn’t ignore my roots.) As you can see in the picture, it comes in a bottle with such a cute little tag which tells you exactly what your drink consists. I was surprised at how refreshing the juice was. Though I’m much more used to the texture of smoothies when it comes to healthy green drinks and somehow I was expecting it to be more filling. And some may or may not feel it’s a little pricy for its amount (Mine was 250ml for £3.5). But you know, the ingredients are all organic and it’ll be such a lovely treat for yourself once in a while and I’m definitely going back to try different flavours. Seriously though, do recommend to those healthy juice lovers.

As 42 Juice Bar says “Not all juices are created equal”, from a wide range of healthy & tasty drinks, you can pick a perfect juice which suits your health conditions or just simply how you feel that day. It’ll be such a perfect cute drink to have with your friends on sunny Spring/Summer days too!

Prologue

It’s been awhile since the last time I blogged. I remember the very last time I had a blog page was when I was 15-16 years old and I’d pretty much blog about everything; random teenager things. Although I didn’t really share it with many people – sometimes I even made my posts private – I remember myself still enjoying typing up my thoughts and sharing them on the Internet.

So yeah, hello there. My name is Miho and I’m currently living in Brighton, UK. Most people have something they’re passionate about and mine would be cooking. As much as I remember, I have been enjoying cooking and admiring the beauty of it ever since I was little. Whenever my mom would be preparing dinner in the kitchen, I would try to copy her and act all ‘masterchef-like’. There were quite a few times when I’d sneak pieces of tuna sashimi my mom had bought for dinner, and I’d try to make a dish out of them. (OH little silly me. Well A+ for the effort though, no? Just kidding. Haha)

Anyways, I have been sharing my cooking-related pictures on Instagram for awhile now and thought, “Why not embrace myself a bit more? Why not bring back my old blogging habits? Why not, right?” So yeah, I can’t wait to share more of cooking-related bits and pieces in my upcoming posts with you.
